This Small Batch Series release is COMING SOON, and could be our best yet. Our new make spirit, made from 100% Australian malted barley, is light and fruity coming off our tall copper pot still which allows this whisky to take on the intense, residual flavours that have been left behind in this extremely old barrel.
After going through it’s full maturation in an antique Spanish Oloroso cask, this rich, dark amber whisky has pulled some superb flavours that might take you back in time to a warm and sunny Bodega in Spain.
Barrel
An Antique Spanish Oloroso barrel has been used for full maturation here, which is a type of oak barrel that has been used to mature Oloroso sherry, a style of fortified wine from the Jerez region of southern Spain. Oloroso is a dry, oxidatively aged sherry, meaning it is aged without the protective layer of flor (yeast), allowing direct contact with oxygen. This produces a darker, richer, and nuttier wine compared to other sherries, leaving that goodness for our whisky!
Taste
First up, it is textured and mouth-coating with bold notes of dried fruits, plum jam, and sweet cherries in syrup. Mid-palate reveals deeper tones of bittersweet dark chocolate, espresso, and walnuts, all wrapped in velvety tannins from the oak. There’s a refined dryness that keeps the richness in balance, evoking old sherry bodegas and seasoned wood that’s smoother than a jazz sax solo.
